The crown jewel of La Torretta’s cuisine experience, this fine dining gem was created by Chef Albert Roux, a revered name in the international restaurant world. Chez Roux will be his first-ever American establishment and will offer a contemporary French menu with heavy emphasis on local and fresh products. Chef Roux and Executive Chef Maguire look forward to bringing their exceptional cuisine to La Torretta Del Lago.

Meet the Master, Chef Albet Roux

From working at the French embassy in London and the British embassy in Paris, to serving as personal chef to some of the United Kingdom’s most prestigious families — Roux’s career path is as impressive as his award-winning creations. Voted one of the most influential chefs in the U.K. in 2003, Roux is perhaps best known for opening Le Gavroche in 1967. Located in London, it is Britain’s first Michelin-starred restaurant. In fact, Chez Roux’s Executive Chef, Wyatt McGuire, is currently training under Roux at Le Gavroche.

A casually elegant and relaxing waterfront showplace for the farm fresh, New American cuisine of award-winning resort Executive Chef Joseph Trevino, Prime indulges the senses with a menu and decor that are equally sophisticated.  The 280 seat venue serves as La Torretta Del Lago Resort & Spa’s main dining room and also supports conference dining needs.  Guests can mix and match mouth-watering a la carte items with a constantly changing selection of live station offerings that combine the personalized aspects and portion sizes associated with tableside preparation with the speed and convenience of a gourmet buffet.  Prime prides itself on a knowledgeable wait staff and dedication to providing the best of local and sustainable ingredients - the majority sourced within a 100-mile radius of the property - including produce, aged prime beef and chops, game and Gulf Coast seafood, complemented by an extensive wine list and decadent desserts made in house.  The serene and flowing interior with floor-to-ceiling windows pairs a deep plum custom carpet with sleek, white leather banquettes and upholstered sofa-depth chairs in shades of green, brown, stone and blue – colors that capture the ever-changing palette of the shimmering lakefront view - creating an ideal spot to linger over breakfast, lunch or dinner.

Meet Executive Chef, Joseph Trevino

Joseph Trevino is no stranger to the intricacies of fine resort cuisine.

His love for the culinary arts began in a neighborhood Greek and Italian restaurant where he worked following his enlistment in the marines. Having discovered his life’s passion, he enrolled in culinary school where he excelled and promptly secured a chef intern position at the legendary Boulders Resort & Golden Door Spa in Carefree, Arizona.

From there, Chef Trevino began a culinary career that took him on a tour through some of the country’s finest resorts — from the Peabody Hotel’s acclaimed Dux restaurant in Orlando and Loews Ventana Canyon Resort in Tucson to their Miami Beach Hotel in South Beach. His most recent position was as the Executive Chef of the Four Star, Four Diamond Canyons in Park City, UT.

Today, he can be found heading one culinary effort after another for La Torretta guests. Whether he’s overseeing preparations for an upcoming event or putting the finishing touches on one of our many menus, with Chef Trevino at the helm, we’re all in for quite an adventure.

Hours

Located in the La Torretta Conference Center, Prime serves breakfast, lunch and dinner —both buffet style and seated.

Breakfast: 6:00 a.m. – 10:30 a.m.
Lunch: 12:00 p.m. – 2:30 p.m.
Dinner: 5:00 p.m. – 10:00 p.m.

Those in the mood for something more exotic don’t have to venture far. Located on the second level of our exquisite lobby, Yoi offers the finest in contemporary Japanese sushi.

Freshly carved sashimi, carefully sculpted nigiri and meticulously wrapped rolls are as pleasing to the eye as they are to the palette. Of course, no meal is complete without the proper beverage. Guests may toast to Yoi’s edible masterpieces with a variety of Sakes, specialty cocktails and other alcoholic and non-alcoholic beverages.

Experience Yoi seven days a week, from 11:00 a.m. to 11:00 p.m.

 

Located just across from The Spa, Essence Café is overflowing with a variety of nourishing and organic treats. Bright, friendly and refreshingly casual, this is the perfect place to enjoy a custom-blended smoothie or freshly squeezed juice before or after your spa treatment.

Looking for something a little more substantial? The café also offers a variety of menu options that are as enticing as they are healthy. Prepared from local, organically grown products, seasonal ingredients and the highest quality of meats and seafood, each nutritious dish is so divine you’ll wonder how it can possibly be good for you.

The Essence Café is at your service seven days a week from 7:00 a.m. to 4:00 p.m.
